Yes you can use two dual cards. Thats the way my system is.
Personally I'd use two alike if possible to avoid conflicts.

Playing wise my system does run great.
I was really trying to make the point that you don't really need a high cost system to run multi-tables.
Notice that my 2 dual VGA cards cost less than $80....
