Take the MRS up the Eifel tower (after dark)and watch the Bellagio fountains from that vantage point.

When you say "Red Rock Canyon Tour" I hope you mean driving your rental car there - not an organized tour. It is easy as hell to get there yourself - get on Charleston and keep going west and it will be on the right. Or if you want to go after you get back from Hoover, go to 215 west and swing around and go west on Charleston. It will 115 degrees so you won't want to hike anyway but the drive is great.
On the way back to the strip swing by Red Rock Station and check it out.
