From personal experience I prefer one monitor with lots of overlap.

I've played 42 sngs at once on a 14inch laptop monitor with no problems. I cant imagine playing sngs on multiple monitors, too much moving around.

I have the 225BW and love it. I only 4 table but there is a lot of extra space.

The 30" Dell is a no brainer. I certainly would've bought it if I weren't playing on a Mac Mini which only supports up to 1920x1200. Right now I have the Dell 24" widescreen, which can do 6 smaller tables but I want more. As soon as I decide to build a PC I'm upgrading to the 30". It really is the best and obvious choice if you have the money.

P.S. Before this I had two 20" Dells and they were fine too.

16 tables without overlap is fine but the text on stars is starting to look a bit small

I usually run 16 tables by having 12 tiled then another 4 along the bottom of the screen with the top 50% of those tables overlappin with the bottom 50% of the 3rd row of 4 tables. I like it, works well.

I'm considering buying one of these. Can anyone recommend a graphics card that won't cost the earth? Also, my PC is about 2 years old - will it be able to support this setup, or will i need to shell out for a new pc?

what does this mean? do you mean to cascade the tables instead of tile them?
