the only way i see this resolved is if you and a few others try out this game, each of ye alone each time and than in pairs at this table and over time watching, this could give you a bigger sample to decide.
i have played in my local HONEST casino and this is normal outcome for players who dont fold ever, when you flop a set of tens and theres an A on the board you must take into account the higher set of aces.I have seen players lose 3 buy ins in 30 mins at this level regularly

The title of your post asks for the probability you were NOT cheated... Based on everything you say, I will put that at 50%.
And the last line of your post, asks what percentage of the time you were NOT cheated.... Well, there, I think you were probably not cheated about 99% of the time you were in that cardroom, but that is just a function of how long you were in there.
