I use a dry rub (the main ingredients are)
- pepper
- paprika
- minced garlic
- rosemary
- oregeno
- sage
- thyme
- basil
- if you like spicy, add some red pepper and mustard

Could coat the roast w/olive oil to help the rub stick better.

For sides, I like an apple dish, garlic mashed potatoes and creamed spinach.

MetalRat's rub is a good start. Serve with garlic mashed potatoes and glazed baby carrots.

Mashed potatoes and asparagus are the correct answers, however they are not the most critical part of your dish. Your choice of meat and these bland vegetables on the side need some sort of kick. This leaves you with 3 general options: latin spice (peppery, jalapeno type flavor), indian (curry, thai spice) or european. Definitely, european for this... This means a creamy horseradish sauce. These come prepared at the store, or make your own.

Make it should coat the roast and add a good amount of salt to the mix, possibly even a mix of salt and garlic salt. I think pork needs more salt than most people put on it to really taste good.
That said I'd cook up some of that mexican bean soup you get at restraunts (you can buy it canned at the grocery), the mentioned rice and beans or abaked potato, and some tortillas with alittle touch of butter on them.
