this is simple. think of it as 4 piles. three of them have certain cards on top and the 4th is the leftover cards. for the first three piles, the number of cards in the pile is 11 minus whatever the value of the card is. the fourth pile is 52 minus the other three piles

so the number of cards in the first three piles is (11-x)+(11-y)+(11-z)

lets say the leftover cards is n. so n=52-(11-x)-(11-y)-(11-z)

so n=52-33+x+y+z

so n=19+x+y+z

if you notice, before he counts the remaining cards (7) and deduces that the last card must be a 2, he counts 19 cards off of n. then he reveals x and y and he can figure out what z is by subtracting x and y from n-19

incidentally, this trick is more effective if you count to King instead of to ten at the beginning. that way, instead of counting 19 cards off of n you count ten off, which is a bit cleaner
