I would valueraise to $100 which is enough to keep him in the hand on the turn, and leaves a nice stack on the river for you to valueshove (1/2 pot bet/fold if it's a heart river).

40 vpip is too high for you to put him on a set.
I think you just keep milking him - his most likely hand is a worse ace than you and its easy to pass a raise from his profile (That would reliably mean he hit his kicker).
Bet turn and river (1/2 pot or so on turn, milk him on the river as well a la Phil Hellmuth)

To check this turn you really should have an idea what your intention is if he bets. To me your AK is not a great hand to be check raising with, as it helps your opponent fold his losing hands, yet puts you in more jeopardy when he has
you in trouble.
