It only really matters if you think you can play many hands faster than one, which is rarely the case at most of these sites.

Of course you can play many hands faster than 1 because the dealer has to go through the process of hitting and standing less times.

OP, I would much rather play 5 $5 hands than 1 $25 hand because there is less variance in the former.
