Gimme some suggestions for mushrooms
I don't mean the drug either. Sorry if that's not clear from my title.
I want to marinade them and fry them (as steaks) or something like that. Mushrooms are totally [censored] delicious so I'm looking for a new way to appreciate them. I was inspired by the avocado thread from a while back (another one of my favorite foods). The mushrooms are Portobellos and look like |

Marinate Portabello tops for 15-20 minutes
Marinade: 1part. Worstershire sauce 2parts.High Quality Italian dressing 1part red wine season with garlic, kosher salt, ground pepper etc. BBQ/grill few minutes a side (sliced sweet/purple onion too) enjoy w/ cous, steam, fried rice |

I kinda do it like I marinate some steaks. BTW, feel free to experiment with your marinades...if something sounds good...try it.

Just a tip for regular old button mushrooms:
To check for freshness, look at the underside, where the cap meets the stem. If the mushrooms are fresh, there won't be any gap, and the mushroom and the stem will be touching. As the mushroom gets olders, the cap pulls away from the stem, showing more and more of the dark underside of the cap. If your SO comes home with a box full of mushrooms with the dark underside of the cap exposed, send him/her back to the store with a stern scolding to get fresher produce. |

I really like them just with a little butter & garlic.... Good, fresh vegatables can stand up for themselves in the same way that decent meat can -- sometimes we seem to ignore the simple option too much with vegatables!
I like to use a griddle pan for maximum retainment of mushroom flavour, and you also get those cool stripes for extra presentability! But I actually find that mushrooms taste their absolute best when barbecued. I also cook Mushroom Stroganoff and Mushroom Rissoto sometimes which are straightfoward but taste pretty professional. I have a good recipe for both but would need to look it up. |

Quick mushroom recipe: put a chicken breast in the oven (if boneless/skinless, probably about 20 minutes at 425 or so). Slice mushrooms and sautee with a bit of EVOO over medium-high heat. Once fork tender, deglaze with a splash of whatever (white cooking wine for me), turn the heat down, and add a can of Campbell's Cream of Mushroom soup. Let simmer and reduce a bit while the chicken finishes, and you've got a great chicken and mushroom meal in under 30 minutes without much work.

Wife & I like this one for a sat. afternoon lunch:
Cut portobellos into thick strips Do the same with zucchini Add thickly chopped red onion Combine wih 2tbsp olive oil, 1/4 cup water, and sprinkle of oregano. Roast in 425 degree oven until vegetables are desired tenderness Serve in tortilla wraps with grated monterey jack cheese and some fresh salsa. Enjoy! |
