The table they are at uses the under the table camera technology to show the cards. I'm not sure, but I would bet that for a lot of hands folded before the flop, the player didn't bother to put his cards on the glass before throwing them in the muck. Thus they can't show us what they were because they don't know.

im pretty sure they showed ted forrest fold T9s preflop once when doyle had AA and barry had QQ in ep2
