Then I left for Connecticut and gained a schedule that doesn't allow some perks I get used to during the Fall/Winter/Spring.

I did go to Nobu57 this summer but didn't think to reserve it on open table and I didn't even think of it until this thread popped up, bummer.

Restaurants to not make all their bookings available to open table. If you want to go somewhere specific you are better off calling them. If you want to eat "somewhere" open table is okay.

I just recently started using OpenTable and love it. I plan to grow my list greatly in the coming months.

I'm pretty sure that is no longer true for most restaurants on OpenTable. I've heard from both OT and restaurant people that most restaurants on OT now just use OT as their book and the hostess sees the same availability as you calling.

Some restaurants, like French Laundry, only put a couple of tables on OT. And others do restrict seating during certain prime times (this will be noted in the results when you try for reservation on OT), but I believe those are the exception now.
