EV.........?

Hi,

I have been reading 'No Limit Hold 'em: Theory and Practice by David Sklansky and Ed Miller' and im just begining to start reading about poker, i mean i have been playing for years but only started to actually study it right now.

My question is what is the whole 'EV' thing, i dont understand it one bit. My mate tried to explain it to me and he knows quite a bit about poker now after readings a lot of books, but he wasnt the best person to turn to for this instance.can anyone explain this theory to me?
