Doesen't the min-raise reek of strength? Or is this the easiest push?

An open minraise is just some donkey idiot. A minreraise of a preflop raise is a monster 90% of the time (usually KK+, sometimes QQ or AK). The other 10% of the time it's utter trash from some idiot who "won't let you push him around."

That's slightly more than a min-reraise which is even scarier imo. Regardless, I shove because I wouldn't be surprised if they showed up with 55 or AT here. I'm half expecting aces though.

You should have just shoved initially, that's the first mistake and a very large one. If you did raise smaller, say like 900 or 1000, you would be trying to trap someone into shoving over your raise with a worse hand. I may try that with AK, but with AQ I'd just shove and be happy to take the blinds but not mind a call. I agree you're likely in trouble here, but raising 25% of your stack then folding is truly awful, so just shove and hope they're idiots.

The only other option is he's pulling off a great squeeze play attempt. What's puzzling to me is the SB just flat calling? Maybe he's just a huge donk, but it screws your plans for re-shoving b/c of odds. Very tough decision... If you're playing for first you'd want to call with the odds. If you're playing for the cash you'll fold b/c i don't see the SB having a hand. Maybe he was going for the stop and go?

Isin't shoving with an M ~ 7 and this strong a hand here a little heavy handed? I agree with the slightly lower raise to induce a push, though.
