There are two basic types of tournaments like this. One is called single knockout (or elimination) and the other is called double knockout (or elimination). Both types have a winners bracket and a loser's bracket. I'll try to explain the difference:

1. Single Knockout - For the first round of this tournaments, winners go to the winners' bracket and loser's go to the losers' bracket. After the first round, if you lose, you are out. Thus, when the final two play off, there is no second chance for the loser. In this format, you are guaranteed two matches and that's all.

2. Double Knockout - For the first round of this tournament, winners go to the winners' bracket and loser's go to the losers' bracket. After the first round, if you lose in the losers' bracket, you are out. However, if you lose in the winners bracket, you move into the losers' bracket. Thus, when the final two play off, the winner of the winners's bracket must lose twice to lose out while the winner of the losers's bracket only has to lose once to be eliminated. In this format, you need to lose twice to be eliminated.

I would suggest that a single knockout tournament with a best 2 out of 3 for the final would a good format. The double knockout tourney can become very cumbersome to set up and getting through the loser's bracket means playing about twice as many (or more) games which can be hell.
