Not fun but I prefer turning the hand into a bluff. Bet the flop, fold to a raise - evaluate but probably just shutdown if called. Checking to a nit here is just going to be bad since it often means you're behind if they bet, but it's going to be very difficult to get away from the hand because you can easily convince yourself you just really under repped it. This is also the reason I'd usually just call or even fold preflop to a 12/8.
