You can think of PLO8 SNGs as being split into phases defined by the blind levels.
Early: blinds from 10/20 through 25/50. In this phase you get an edge by folding more than your opponents (playing tighter both pre- and post- flop). Also you should size up your opponents.
Middle: blinds from 50/100 through 100/200. Most people play a little too weak-tight here, so your edge will be raising more both pre- and post- flop than your opponents. Steal lots of blinds.
Late: blinds 150/300 and up. Game tends to become 'joust with the blinds' if it isn't HU by now (blinds are now big enough that people go all-in with a wide range), so if you have an edge it will be from better understanding of what hands stack up well HU and ability to estimate opponent ranges based on how often they raise.

Other general advice: as in all SNGs, your ability to play at least decently HU is critical if you want to be profitable. Enough of the money is locked up in first that having a good ITM% is not enough, you need your fair share (or better) of firsts if you want to do well.
Second, you have to develop a feel for how much to loosen up on the flop as the pots get big with respect to your stack. In regular PLO8 you would rarely if ever bet pot with just top pair on the flop, but late in an SNG you will want to once you get into situations where the pot is similar in size to your stack.

A good way to learn by watching is to play against one of the successful regulars (who have played thousands of PLO8 SNGs) and see how they play. UroBean, AngryFish, and A_Ivanovich all seem to play a lot and be profitable (though AngryFish is not as good as the other two).
