Supreme Commander supports one battle screen and one map screen but I think you need a really serious rig for that.

http://en.wikipedia.org/wiki/Darius_%28arcade_game%29 Not sure if MAME can handle multiple screens. there's also a Ninja game that uses three screens but I don't remember it |

I'm sure you know this but all the hard core flight sims support multi-mon wrap around displays.

I seem to have found that this isn't possible without a device made by Matrox called Triple (or Dual) Head 2 Go. Essentially, our use of multiple video cards doesn't quite work right for most "normal" games.
