Actually the pinnacle of french fry dining is Poutine and if you prefer a "healthier" alternative "Frites sauce" (ie poutine minus the delicious cheese curds)

I'm originally from Quebec and hence the love of poutine...It goes along with my love of smoked meat and real bagels.

I bring packets of poutine sauce back to San Francisco with me after trips home. After that it is just a matter of finding some cheese curds and I can whip up a little taste of heaven.

As The Daver notes, good fries don't need any condiments. McDonald fries in the beef-fat days used to be this way.

they changed it again 2 months ago to be transfat free

a. The fries still have beef fat in them. Just cause there was a big story about it doesnt mean it went away. There was a huge story on coffee burns and we stil sell it.
b. The oil has been changed twice in the last 4 years. about 4 years ago it was changed to a lighter vegtable oil blend, aand then about 2 years ago to a trans-fat free blend in most markets.

It comes as a powder like many pre-packaged sauces/gravies. Poutine sauce is not just gravy. It has a deeper/saltier flavour.
