Default which video card should I get?

I am buying and building a new poker set up and I want to have have two monitors with the biggest resolution possible. Would it be better to use two video cards or one video card that has a dual output? here are a few that I found will any of these work and what are the differences between them?

Do you have the monitors already? Resolution? Interface? What mobo are you using for this build?

I don't really have anything yet here is what I have put together on newegg so far:

computer build

all of that with the Intel Q6600 which is out of stock I guess. I don't really know about the monitors either I want to use two with 1600x1200 res. I like the Dell 2001FP or 2007FP but are there cheaper options? Is my build really overkill if I'm mainly just using it for poker, music, and internet?. I will be running all of the common poker apps so will definitely want it to be fast when multitasking.

I was thinking about getting two of these? How many tables could I comfortably do using this. I wasn't really thinking of getting a CRT but this is a really good deal if I can get two of these for less than $400? monitor

I'd get an e4400. I keep hearing intel is cutting prices and/or adding new processors to their line up, but I don't know the details and I'm too lazy to look 'em up since I've looked up about 34,029,340.3 things for people lately. For your purposes it may not be worth the wait.

That's pretty much exactly what I would have told you to buy too. Nice job! Just make sure the video card supports your desired resolution on the second montior, unless ...

Their specs are WRONG on that crt too. The max res is 2304x1440. I wouldn't bother considering two of those unless you are playing 10+ tables. That monitor has plenty of real estate. I can't make that decision for you though (lcd vs crt). That's about the best monitor you'll find for poker short of the 30" lcds, but there is no flat-panel "wow factor". I personally couldn't care less about "wow factor".
