vs an unknown I will show down unless the [censored] really hits the fan. I think that he'll show up with a worse ace or some cheese enough in this big pot

I would check/raise the flop. I think SB is usually a retard with a hand like AT, and I'm thinking we're a slight favorite over the 3 bettors range. Although I wouldn't expect the 3 bettor to call me down with a worse hand, but it does happen. The main reason I'm check/raising the flop is so it doesn't get checked through.

If the 3 bettor 3 bets the flop I would grit my teeth and calldown if it gets heads up. If it's 3 way and he fires the river I would find a fold. If he raises the turn 3 way I prolly find a fold.

As played I would play the turn the same folding to a raise, and valuebet the river, his line is very strange, but I think it's a retard with a worse ace more than a better hand.
