Never ask this question to a girl you are interested in because she will not be honest or will freak you in a bad way. However, with girls that are friends ask away and be prepared to hear some crazy stuff.

The big deal here with conversation is that it somewhat depends on the girl. If this is an intelligent nice girl that you want to date, being nice, caring, attentive, and funny is more than enough. No need to try to pull crazy ideas from leftfield. Talk about things you like and know, and ask questions, and you should be able to get into deeper conversations if you have anything in commone with the girl and are a decent conversationalist. On the other hand, if you are trying to pick up a girl at a bar or take a girl you just want to hook up on a less formal date as such, different things may be in your best interests.

On an unrelated note, I will say the worst possible thing is a date who doesn't know how to have a conversation. They are obviously into you b/c they agreed to go, but no matter what questions you ask and what topics you bring up they give lifeless answers. I had a girl I dated/hooked up with a couple of times and it was just miserable.

If you need fall-back topics then the date isn't going so hot in the first place.

Just relax, go out and have a good time, and hope you kind of click and things flow.
Sometimes it works awesomely with 2 people.
If it isn't working awesomely then it's probably not worth pursuing.

If you can make her laugh then everything is easy from there.

My last 'first' date was with the girl I have been seeing for 4 years.

We met at some bar downtown that had a band playing I liked.
At the bar were these 7 senior-citizenish German tourists who were going from city to city in the U.S.
I was talking to a couple of them (the only ones who spoke english) and having a good time and explaining that the band that was coming up was really fun and I was meeting a blind-date and I had no idea what she looked like.
They were laughing that she was probably going to be 350 lbs or something, etc etc.

Girl arrives. I've had a couple drinks already. I'm talking to her about my new 7 new bestest friends forever from Germany (Hans, Stephan, etc etc).
I was in my groove. All the German guys are giving me the thumbs-up for the girl who did not weigh 350 lbs (and I tell the girl that when she wasn't looking they indicated their approval).

Just go out and have a good time and let it flow.
That's my strategy anyway.
