Oven bacon is my NBF! 400 degrees for 20 mins or so = pure piggy love.

What do you guys think about this idea that is brewing in my brain: Vodka-infused Lemon and Black Olive Roast Chicken...

Even though the alcohol in the vodka will essentially cook off, it will allow some alcohol-soluable flavors to come out that would otherwise not be tasted.

Would it work to cook the bacon in a toaster oven or something like that? It takes too long to pre-heat in the morning for me sometimes.

Preheat? No. Don't.

Get a rimmed baking sheet and a wire rack. Go to a commercial supplier and get the heavy guage aluminum ones. No Wal-Mart stuff here. Spray all with non-stick spray. Bacon on rack. Pan in over. Temp to 400 (or 425 if you are in a hurry). Make the coffee. Go take a shower and get dressed.

Rejoin the food in the kitchen in like 20 minutes or so.If bacon is not done to your liking, crank the heat as you make the eggs and toast. A toaster over should work fine, providing it can get hot enough. I prefer my gas oven myself.

Extra Colossal Shrimp with Mango, Peppers, and
Passionfruit-Lime Glaze

No, my bowl is not freakishly small, the shrimp is THAT large. These things are almost 1/2 a pound each...

Chopped up 1/2 a red bell pepper, and 1 mango. Put this in a large bowl with some olive oil, ginger, and 2 cloves of garlic. Tossed the shrimp in this mixture, saute'd it on medium high heat. After a couple minutes, i threw in the pepper and mango marinade mixture. At some point I also poured in about half of a passion fruit-lime glaze mixture to let it reduce Passionfruit Lime Glaze

Brushed the remainder of the glaze on at the end. Wow this was good. FYI, the original recipe can be found here:

i bought some "colossal shrimp" at trader joes yesterday. I grilled 2 and they were amazing. I've been wondering what to do with them tonight and i like your idea.

So glad that grilling season is upon us in the Pacific NW!

No pics but I made a killer Beer Can Chicken on Saturday. Anyone else love these babies? Simply buy a good whole chicken, rub with your favorite dry rub and butter. Get a 16 oz beer, drink a couple big swigs. Then cut a couple other holes in the lid. Toss some rub and some garlic in the beer then shove it up the chicken cavity, so the bird rests upright. Put on the grill, indirect medium heat. Baste it every 15 minutes or so. Should be done in about 75-90 minutes. Check breast (165) and thigh (180) temperatures for done-ness. Let rest and butcher. Moist, delicious bird and killer crispy skin.
