Default Datamining

This may seem like a newbie question and I don't know exactly what forum it belongs in so I will just ask it here and if a moderator would be so kind as to move it to the right place, it would be appreciated.

I was just wondering how exactly datamining is done. I sort of know what it is but sort of don't. Overall, I was just wondering if someone could describe it and how to do it as it seems pretty useful for 25Nl and above

When I used to datamine party, I would open Party tables,as many as possible, then turn on Pokertracker, which would write the hands into it's database. PokerAce HUD displays the statistics, which helps select the fishiest tables.
