The important part of this hand, is that the stack sizes (your or their life) is still great compared to the pot, and that the Mex Dudes are keeping the betting initiative and seeing if OP is pot committed but without yet having committed themselves which means they can back off anytime. They put all the committment on OP, and thus play goot.

C'mon dude, I'm all for being able to mention poker in OOT if it's relevant to a story, but poker analogies are always super lame and should be avoided at all costs.

While I agree in general here in OOT, I think that as poker players, we should be able to apply our poker skills to real life situations such as this if applicable, which as I pointed out it is here.

Thats the biggest mistake you can make when you see someone doing something illegal. Its like saying, "Hey, how about you beat me up or kill me since I just saw what you were doing."

Anyway two things you could do in this spot.

1) Get into a fight with them and beat the crap out of them.

or

2) Tell them you will call the cops.

Either way if they are violent individuals you can expect retribution regardless of your move. So overall go with whatever you feel confortable with and would you stop saying, "Hey, WTF you doing?" to criminals as they are doing illegal activities.

Call the cops before you yell. Failing that I call the cops immediately and follow them if they run. I don't see why you would get into a fight with these guys seeing as

a. It would be over your neighbors gardening gloves.
b. They could easily have knives.
c. they probably don't have much to lose if they are stealing gardening gloves.
