Glengarry Glenross - Alec Baldwin's "motivational" speaking appearance.

Big Night - Making the omlette

Willy Wonka and the Chocolate Factory - The penultimate scene when Wonka tells them that they lost, but the Charlie gives back the gobstopper anyway.

There are so many obvious ones, but these are a few less so.

I agree that the inclusion of anything from Alexander makes the OP somewhat hard to swallow, but I'll play anyway.

Jaws: The scene where they sit around in the boat drinking and comparing scars; where Quint starts telling the story of what happened to the USS Indianapolis. Definitely Spielberg at his finest.

The Big Sleep: The scene with Bogart and Bacall, sitting in a bar supposedly talking about horse racing; the language of this movie and particularly this scene is pretty daring today, and was tremendously risque in 1946...great stuff!

Good gun fight in this one, where Val Kilmer exits the bank, smiles at the guys in the car, spots a cop crouching on the other side of the street, levels his AR-15 and opens up. A 6 minute car chase/gun fight ensues. Too long for your purposes, but a spectacular scene.

Also add:

Apocalypse Now from the Ride of the Valkyries to "Charlie don't surf" to "I love the smell of napalm in the morning...."

Bad movie but good scene: 3000 Miles to Graceland, where the Elvi thieves open up in the casino.

Full Metal Jacket: scene where R. Lee Ermy asks about Lee Oswald, the Marines, and the killer spirit.

Reservoir Dogs: Mr. Orange shoots the civilian in the car.

Ending of Butch Cassidy & the Sundance Kid

Back to the Future: No, Biff, you leave her alone.

Breaking Away: the final bike race, or when Dave is keeping up with the 18-wheeler on the highway.

Kudos to the mention of the Pele speech in Vision Quest. I also love the scene where Tanrahan says, "You know Louden, for the first time, I'm starting to worry about that other guy."

I can't believe you included a Godfather scene, but it wasn't the baptism scene. That's the best scene ever in the history of film

Some others that came to mind were the Helm's Deep scenes from LOTR 2 and the Matrix bullet-dodging scene
