I just realized there is also only one blonde haired blue eyed poker pro = Chip Reese. Can't think of any other pros who have naturally blond hair and blue eyes.

I'm sorry, but I call BS. Other than Greenstein, I think you just completely made up all of those names. I find it inconceivable that a guy could have a last name of Nguyen or Pham AND play poker, let alone be a well known pro. It's well known that most asians are extremely anti-gambling.
