I like provolone (don't know what type). It smells like dirty feet, but it's a strong cheese that goes nicely with salami.

Tillamook Sharp Cheddar is a great everyday cheese. (Tillamook Creamery, Oregon)
Cougar Gold is a nice white cheddar, made by Washington State University.
I don't really go more high end or snobby than that, but I do greatly prefer those to Kraft and such.

Some good stuff mentioned here. Manchego and Parmesan are probably two I can't do without. The Cougar Gold is an excellent cheddar. Two that I like are "Drunken Goat Cheese," made in Spain and dipped in red wine, and "Sage Derby," with sage added into it.

I'm somewhat of a cheese snob, and this French Sheep's milk cheese is the best. a bit expensive and probably pretty hard to find for a lot of you.

cocktail cheese is awesome. i love brie, smoked cheddar, and smoked gouda.

for sandwich cheese, i like mustard cheese and provalone.
