I actually started writing a script for FT that displays this on the table like a HUD, never got around to finishing it though. I might finish it one of these days.

Sure it does, sorta. You know they are on your table and if they don't show up on search, then they have 'blocked' search. I don't know of a n00b/fish that blocks the search. Just the fact they know enought to block search tells me they are experienced. Maybe not good, but just because the multi-table doesn't mean they are good either.

How would it prevent you from knowing it they were hiden from search?

If you read from the FT player search function, then yes, but if you run a search through the actual tables I don't see how it would prevent you from finding them.
