I have the same problem. Usually after a couple hours of playing it goes away. I find that if I focus on breathing normally during the hand it helps me to stay relaxed and it greatly reduces the problems after with the shakes. With really big pots when I know I'm incapable of stacking the chips without looking like a tard I just pull them to the rail and play the next hand and stack them later. If you have poker chip OCD that may bring out other issues, but it works for me. Beer helps, but it also makes me twice the donkey that I already am.
