This is really tough, I guess I'd say Metallica. Although they are far from my favorite band they have at least 7 albums that I could see myself listening to for a long time.

Honorable mention goes to the Chili Peppers.

I'd probably pick something like Bach or 'Toven if they count, as I probably could at least find something interesting years later since it is so complex. It would take longer to get bored of it. 3 chord progession => quick tire of it.
