Oh this just reminded me. Have people heard the Tori album "Upside Down"? (Yes, I'm very gay.) On Disk 2, it has many cover songs including:

Angie (Rolling Stones)
Smells Like Teen Spirit (Nirvana)
Thank You (Led Zeppelin)

They are all really good and interesting although I would certainly not say better than the originals.

Her cover of Smells Like Teen Spirit is easily the worst cover ever. She absolutely ruined the song.

You may be thinking of The Sundays. They did a good version of Wild Horses. Not sure about Jewel. Maybe they both did.

Punk bands do a ton of covers but a few I dig the most are

get up kids - close to me (cure)
scary kids scaring kids - losing my religion (REM)
saves the day - melt with you (modern english)
my morning jacket - rocketman (elton)

I also really like
joss stone - fell in love with a boy (white stripes - not better, but really well done)


Theyre a few more that I love but I dont have itunes open, will have to come back later

Edit: I must include radioheads version (they worked with another band I cant remember off the top of my head, maybe 'horse' something) of wish you were here. Almost impossible to be better than the original, but its so very well done.
