When I'm playing, I get nervous knowing I have an average, vulnerable hand and play weak. I only realize the stupid move I make in the heat of the game when it's over and I'm thinking rationally again. It's a serious leak I'm working on.

Not betting the turn may have cost you the entire pot. Looks like he was holding AK and caught the K on the river.
When he just called your flop bet, he is essentially telling you "I didn't touch the flop and I don't have an over-pair." You have top pair with a decent kicker and only 2 overcards can come. You gave him a free card and it helped him.

Betting the flop is fine because preflop raiser may not continuation bet into 3 players if he has something like AK but follow up with a turn bet.
