Kosher salt, freshly ground pepper, cumin. Rub on both sides and grill.
I don't really like heavily seasoned meat for steaks. Burgers on the other hand . . . If it's really cheap steak meat you could just grind it up yourself and make a pretty good burger. What cut are you using? |

I've got to chime in about pan fried steak. While I prefer a hot grill to a pan, if you want a change up and enjoy the taste of perfectly cooked, unadulterated beef try this....
* place heavy, seasoned cast iron skillet in an oven and preheat to 500 * about the time the oven and pan have reached 500, kosher salt and fresh ground black pepper to taste, and a little canola oil on each side of your best cut of steak * place the skillet on the range top with the burner on high * slap that steak in the pan (don't move it around!) and give it 30 sec * flip it over and give it 30 more sec (again, don't move it) * into the oven for 1 to 2 minutes (depends upon thickness) * out, flip, back in for 1 to 2 more minutes * take steak out of oven and let it rest for 5 minutes before cutting it |

if you have a tougher cut of meat, you need an acid to help break down the fibers. Lemon juice is a good one, a coke, (I prefer Dr Pepper) is a good one to have in your marinade as a "helper" ingredient. *NOTE* I recommend this only for truly tough cuts of meat. |

I'm a big NY strip fan and this is how I prep mine:
* Buy or make your own lemon pepper mix (link). Use fairly liberally on steak. * If you bought a seasoning mix, you might not need additional salt. If you made your own, add a bit of kosher salt. * Dust with cayenne pepper I only season one side of the meat and I cook on gas. |
