Because I keep getting tricked. I pull alongside a little, femenine looking car and I look over to see if it's a cute girl, and it looks like Large Marge from Pee-Wee's Big Adventure. Really it's my fault for continually being tricked by the phenomenon.

Like most people, I affix gender to all sorts of places where it doesn't belong. This extends to cars. The vast majority of cars have an immediate association with gender for me. Interestingly, out of the first 15 replies or so, I'd guess only 2 or 3 conformed to my stereotypes. In part, I think if I associate a specific individual with a specific model, that model is forever prey to my strongest associations gender.

A good example is the Eclipse. I realize I've probably seen more women driving this than men, or more high school/college girls (probably from New Jersey) driving this than women. However, a specific friend once had a black eclipse, so Mitsu Eclipse is male. If I was specific, of course, I'd say the GT is male, but the Spyder is female.
