Default the pot in live play (lc)

Whats the point of dumping all the chips in play into one big messy pile in the middle of the table? Alot of times, especially in tourney play, the players will already have there chips stacked in neat, easy to count denominations and will be putting there chips in the pot still in these stacks, before the dealer topples the tower into the existing pot.
Advantages of keeping the stacks intact:
1)Easier for all players to keep track of how much is in the pot.
2)Less time (especially short handed) for players to be restacking chips after pot has been shipped.

Advantages of toppling towers:
1) restacking chips is fun??
