This is the only issue. CO could have and 3-bet a lot of two-pair hands which folding would be a significant mistake against.

I agree with this. Furthermore, we're talking about a guy who's something of a maniac. Those are near maniacal stats. I wouldn't fold to a three bet on the turn. Oh, and BTW, why don't we like a flop cap here? This charges GSSD's too much to chase (not that they won't anyway but it forces them to make an obvious mistake). Using the CO's aggression against him is fine but I'd just do it sooner. That's why we're on his left here.
