Vegas Memorial Day Nightlife

My apologies if this non-gambling topic does not belong in B&M, but it seems like most of the Vegas regulars make their home in this forum.

Can I get some recommendations for a bar/club nightlife activity on Monday, May 29 (holiday)? We are a group of four couples, age 25 - 60. Good seating is a priority. Budget ~$1,000 total. Some of us are not crazy drinkers so I would expect to average about five drinks per person. Prefer only one destination.
