These aren't necessarily my all-stars, but I think this would be a funky jam:

Vocals: Beck
Guitar: Trey Anastasio
Bass: Flea
Keyboard: Steve Winwood
Harmonica: John Popper
Drums: Carter Beauford

And writing the lyrics: Bob Dylan

Tough leaving out guys like Kurt Cobain, Jerry Garcia, etc.

you're absolutely right, some choices are damn tough.

Winwood, very nice, wish I'd seen him.
I saw Dylan and his backing band had G.E. Smith (SNL fame) on guitar, excellent.

Of people that I've seen:

Philip Bailey: Vocals
Eric Clapton: Lead Guitar
Bob Weir: Rhythm guitar
Jack Bruce: Bass guitar
Ginger Baker: Percussion

If you can't guess, the Cream reunion in MSG was incredible.

Everyone that didn't include Trey Anastasio on their list either needs to see him live, or has an incorrect list.

Can I amend my sentence to include "when I had the chance" or "the last time he was in town"?

I gave up because I want to pick both Les Claypool and Trey Anastasio, except that they actually formed a band together and I didn't like it.
