Two overcards vs. two undercards
Is it accurate (enough) to say that any two unpaired overcards pre-flop are about 2:1 all-in vs. any two unpaired undercards?

Unsuited big cards are more like 3:2 over small suited connectors

While Nottom is correct, I would still agree with you in general. Flush and straight possibilities can skew things a bit, and if the undercards have both and the overcards have neither, the overcards' chance can shrink under 60%.
