I assume what he meant is that they shuffle the remaining unused/unseen cards still in the deck after each card is dealt. They could easily do this but it doesn't really help with security in any way.

However, I'd be shocked if most Blackjack online games don't shuffle after every round though. There's absolutely no reason for them to not do this since it only takes a couple of nanoseconds to 'shuffle' up the virtual deck. Real casinos would shuffle the deck every round if it could be done in less than a second.

Actually they can do this in real-casinos.

They are called 'continuous shuffle machines' and you just put the used cards back in the machine after each round.

I've even dealt on these machines before (was a BJ dealer for a few months).
Many players don't "trust" them though because you can't get into the flow of the shoe or some nonsense such as that.
This is a relatively good thing for blackjack as a whole anyway as it helps the skilled players that these CSM's haven't caught on too much.

it's just one of two methods of using the RNG to choose the cards. You can "shuffle" the whole deck before the cards are dealt, or you can randomly choose a card from all those remaining.

The former is more intuitive and "realistic," but inherently less secure.
