I agree with NT!. A good knife is something that you will be able to use for the rest of your life though. The fifty dollar premium for a nice handle and weight is well worth it over the years in my opinion.

[/ QUOTE ] yeah the handle is important. i've got a decent henckel's knife here at home which is very comfortable on my hand. but honestly, i don't cook enough to have my hand cramp up during use anyway. i used to chop up buckets of veggies a day with those crummy knives, and very rarely did it hurt my hands even then. |
