Default overbets and draws

Interested in thoughts on the wisdom of over-betting a pot in order to force someone on a draw not to chase.

Example:
Last weekend, 1-3 game, I raise on the button with pocket 8's... BB and the guy to my right call. I hit my set, but there are two hearts. Two checks in front of me, I bet the pot ($40 or so). BB goes out, guy to my right calls. Turn is a diamond, check to me, I bet the pot again ($120), another call. The river is a heart, he moves all-in for another $150. I know he was chasing, and made it... I fold, he shows A-3 of hearts, just to rub it in.

So, I am wondering, should I have pushed all-in on the turn for $300 and priced the guy out? I mean, I was hardly slow-playing my set... anyways, any thoughts appreciated.
