Chicken Walnut Pizza in White Sauce with Red Onion

I stole this concept from a pizza I had at one of those gourmet pizza places scattered all over Southern California. It was really good but overall a tad on the dry side. I think next time I make this - yes, definitely a next - I will add a bit more sauce. If you attempt this, use more white sauce than you do tomato sauce on a normal pizza. Other than that, it was delicious. Another thought I just had while typing this, you might want to brush the top of it with melted butter just before serving. I think olive oil might take away from the subtle flavor of the bechamel.

Im sure there is no need for this post, but I will sometimes get a hardon while eating sauteed fruit (usually peaches or strawberries), on top of ice cream

Looks great El Sapo. Did you glaze the mango with something or did you just get that nice carmelization from the natural sugars?

It's all just the sugars already there. I chose a mango bordering on overripe. Initially I tried to do it in butter, but couldn't really sear in butter b/c the butter would burn.

are you doing just one of these at a time? Sounds like the flame is too high/pan is too spaced out. It looks nice, but I cant imagine this being all that good without butter. Next time I grab some mangos Ill have to mess around though.

i used to work at a restaurant where they would take planks of pineapple, poach them in butter until really tender and then grill them.

I have some shrimp and semi spicy pork sausage that I need to cook tonight. Any ideas?? I don't want to spend more then 30-45 minutes cooking. I also have corn, tomatoes, and all the usual staples to work with (wine, stock, spices, rosemary, thyme, basil, etc)

BK,
How about a gumbo over rice? I like to make a simple red sauce, drop in seared shrimp, sausage, and chicken, then add some herbs and spices. Let it cook for 25 min, then portion some out over steamed rice (or pasta, whatever you're in the mood for).

Very easy to make, very tasty, and easy to keep for week long leftovers.
