I just recently got Alton Brown's Cookbook.
http://www.amazon.com/Im-Just-Here-F...dp/158479559X/ The sections are separated by cooking method with pretty good explanations for each. I've only made it a little way through, but it seems really good so far. |

"How To Cook Everything: Simple Recipes for Great Food" by Mark Bittman. The paperback version is less than $15 on Amazon. You may want to check your local library as well. Most libraries have huge cookbook collections.
