Tim Robbins in Top Gun. He has a couple of lines during flight, but his face is always covered up, so then it's WTF when he shows up in the big celebration at the end.
Pee Wee Herman is the waiter in the Blues Brothers. Annette Bening is Dan Aykroyd's wife in The Great Outdoors. I think Eric Stoltz is also in Fast Times along with Nic Cage and Goose. I think Cliff Clavin is in Superman as a military flunky.

Ya, I dont know if Pee Wee counts, but he was in a bunch of Cheech and Chong movies.
Samueal L was Stacks Edwards in Goodfellas. Jack Black- The Jackal, he gets mauled.
