Calories from marinade
How many calories are absorbed from marinades? Typical Marinade:
4 Lean Chicken Breasts in 4 tbsp Olive Oil (480 Calories) 1 cup White Wine (180 Calories) (Lemon Juice+Various Spices) If I marinade the chicken for 12 hours and then grill it, what % of the calories from the white wine and olive oil is absorbed? |

Re: Calories from marinade
This is a good question.I have no idea, but I assume it's really not that much. Maybe 25%?

Re: Calories from marinade
Yeah, this is something I always just guesstimate and use the worst case scenario (I'm usually looking to maintain a low caloric level, so I assume on the high side).
Speaking of, I need to get a new grill to fire up these chicken breasts I have marinading in Italian dressing. |

Re: Calories from marinade
Here is a study that kind of addresses your question.
pdf file link: ps.fass.org/cgi/reprint/78/7/1053.pdf It depends on a lot of factors but it appears to me that 20% would be a reasonable max retention amount. |
