Default High Stakes Poker 500k Question

Just out of curiosity why do they have a mixture of cash and chips on the table?
Why not just all cash or chips, is it because it makes good tv?

High stakes cash games in casinos often have lots of bricks of cash on the table as well. Sure it looks good on tv to have all those bricks out there but it's not some manufactured gimmick just for tv.

Really? Does the money get counted by casino staff or so? I wouldn't just trust another player on something like that.
