Poach it maybe? Or maybe split the breasts in half so they're thinner. You'll be able to get the inside to your desired level of doneness without overcooking the outside.

Or just don't overcook it. If you're broiling it then slicing it up, you can take it in and out a bunch to check doneness.

Serious question: Are you gay? Not judging, just asking. It's critical to my understanding of this post.

You describe her as a female friend. By friend I'm assuming you have no interest in banging her after dinner. Therefore, there seems to be little importance in impressing her. Just make the damn pasta. If it's not good enough, tell her to go to Fazoli's.

In my opinion, for someone whose pants you are not trying to get into, this is some serious overthinking.

Wine? Dessert? Maybe I'm weird, but I don't have strawberries and wine with my friends. I also don't cook them meals very often, if ever.

Note: It is possible that there is nothing weird about this and you are actually just a much better friend than I am. If so, carry on.

If you like the shrimp ideas you can just add shrimp to the primavera.

If you do it, use garlic rather than onion if you were planning on using onion. And go easy on cheese or ditch it altogether.

Goes very well.

It's a bad situation. We're friends. I like her as more than a friend. I really don't think those feelings are there, but I feel like trying this as a last effort on the semi-date side of things.

If this was some random girl or girl that I had zero interest in, this would be much more simple for me. And yes, I overthink everything.
