We owned some Japanese restaurants when I was a kid. Sushi with vegetables instead of fish is common and popular. They are some of my favorites actually. Both the cucumber in the middle and the daikon in the middle are crunchy, very light, and good.

I think of those as white-guy sushi. They're not terrible, but they're very bland. I'd rather have something with a bit of zip in the middle, but YMMV.
