My wife habitually cooks steaks with a pan that is too cold. The steak does not sear properly. The pan needs to be able to instantly steam a drop of water for it to be hot enough for the meat.

Try this - it's mine:

Filet Mignon steaks
White Wine
1 head of garlic, cloves separated and peeled
Plain yogurt
Salt
Pepper
Bay Leaf

Preheat oven to 400. Season steaks with salt and pepper. Put peeled garlic cloves, bay leaves and steaks in pan with 1” white wine. Cook in oven, turning once, until steaks are medium rare, about 15 minutes depending on thickness.

Remove steaks, let rest. Allow wine and garlic cloves to cook another 20 minutes or so. Remove garlic cloves from wine, mash with fork. Put mashed garlic in saucepan with wine and bay leaves. Reduce. Add yogurt (3-4 tablespoons) and cook until sauce reaches desired thickness. Season sauce with salt and pepper. Serve sauce over steaks.

Sp it's better to rub the meat with olive oil, rather than heating up olive oil in the pan? Or am I just being a NIT and it really doesn't matter?

olive oil has too low a smoke point i rub the meat with olive oil, then use peanut oil in the pan
